Much like Macaroni & Cheese is a comfort food in the US, Macaroni & Cheese Pie is a comfort food across the Caribbean. Based on traditional Macaroni & Cheese, Macaroni & Cheese Pie is a bit heartier and a touch of spice and bakes to a gorgeous golden brown. The texture can be a bit different if you are accustomed to a creamy Mac & Cheese.
As with many recipes across the Caribbean, recipes vary from island to island. A lot of people layer Macaroni Pie with tomatoes and onions, but this is a basic recipe based upon roux. Other recipes may use a cold mixture of milk and eggs to bind. Feel free to add your own flare. Add ginger, pepper sauce or more curry. Macaroni Pie goes great with stewed or curry chicken.
Macaroni & Cheese Pie
Serves 8-19. Prep Time: 30 mins. Cook Time: 15 mins.
INGREDIENTS
- 4 cups Elbow Macaroni
- 2 cup Shredded Cheddar Cheese
- 1 cup Milk
- 1 tbsp. Flour
- 1 tbsp Butter
- 1 tsp. Mustard
- 1 tsp. Curry powder
- ½ Minced Onion
- Salt and pepper to taste
INSTRUCTIONS
Preheat oven to 400°F.
Boil elbow macaroni in salted water until al-dente. Approximately 8-10 minutes. Drain and set aside.
In a pot, mix your flour, curry powder, and onion. Stir to remove lumps.
Add butter and your salt and pepper to test. Stir mixture over low heat until the mixture thickens to create a roux. Pour roux over cooked macaroni and add the shredded cheese. Mix well.
Pour macaroni into a greased casserole dish and bake uncovered at 400°F for about 15 minutes or until top is slightly brown and edges begin to crisp.
Remove from oven and let sit for about 10 minutes. Cut into squares and serve.
